Crusty Dill Spears

  • oil for frying
  • 2/3 c. yellow cornmeal
  • 6 Tbsp. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. garlic powder
  • 1/2 c. milk
  • 2 Tbsp. dill pickle liquid
  • 1 egg, slightly beaten
  • 4 medium dill pickles, cut into spears or about 16 spears, well drained

Directions

    Heat 1 inch oil in heavy skillet to 400°.

    In bowl, combine cornmeal, flour, baking powder and garlic powder; stir in milk, pickle juice and egg.

    Dip pickles in batter to coat.

    Fry in small batches, 2 minutes or until brown, turning once.

    Remove with slotted spoon and drain on paper towels.

    Makes 16 spears.
