- 5 lb. roast
- garlic
- onions
- 1 c. vinegar
- oil
- 2 c. black coffee
- 2 c. water
- salt
Directions

1Cut slits through meat; insert slivers of garlic and onions into slits.

2Pour vinegar into slits.

3Cover and refrigerate for 24 hours.

4Pour off vinegar.

5Place in heavy pot and brown in oil. Pour black coffee and water over roast.

6Cook slowly for 6 hours. Season with salt 20 minutes before end of cooking time.
