- 1 clove garlic
- 1 head iceberg lettuce
- 1 bunch romaine
- 2 sliced cucumbers
- 8 oz. sliced fresh mushrooms
- 1 can hearts of palm, sliced
- 2 oz. grated Mozzarella cheese
- 1 cubed tomato
- 3 Tbsp. green olives
- juice of 1 lemon
- 5 oz. small curd cottage cheese
- pepper
- olive oil
- red wine vinegar
Directions

1Crush one clove of garlic and rub in bottom and sides of large salad bowl.

2Add next 8 ingredients to the bowl.

3Salt and squeeze the juice of one lemon over the mixture.

4Toss well.

5Top with cottage cheese.

6Pepper liberally with cracked pepper. Refrigerate until time to serve.

7At serving time, add extra virgin olive oil and red wine vinegar to taste.
