- 1 (3 oz.) pkg. lime Jell-O
- 1 lb. cottage cheese
- 1/2 onion, finely chopped
- 1 c. cucumbers, peeled, seeded and finely diced
- 1/2 c. pecans, chopped
- 1 c. boiling water
- 1/2 c. mayonnaise
- 1 Tbsp. vinegar
Directions

1Use sugar-free gelatin, lite cottage cheese and low-fat mayonnaise to reduce calorie count.

2In a shallow 10-inch baking dish, combine gelatin with water, stirring until completely dissolved.

3Stir in remaining ingredients until well blended. Chill until firm and serve on lettuce leaves.
