Cucumber Salad

- 2 or 3 fresh young cucumbers, sliced very thin
- salt
- 1 Tbsp. each olive oil and vinegar
- pepper to taste
- pinch of sugar (optional)
Directions

1In a bowl, arrange the sliced cucumbers, salting them in layers.

2Cover with a saucer and weight down with something heavy. Let stand for several hours, or until juices run out.

3Pour off the cucumber juice, which will take care of most of the salt. Combine all other ingredients and add to the cucumbers.

4Mix and chill.

5Makes 4 to 6 servings.
