- 1 lb. cucumbers
- salt and pepper
- white wine vinegar
- 1 1/2 lb. very ripe tomatoes
- 1/2 c. chopped red onions
- 1 tsp. minced garlic
- 2 Tbsp. chopped parsley
- 1 Tbsp. chopped fresh basil
- 1/4 c. olive oil
- 1 lb. spaghetti
- Parmesan cheese
Directions

1Peel and seed the cucumbers.

2Dice the flesh into 1/4-inch pieces and toss with 1/2 teaspoon salt and 2 tablespoons wine vinegar.

3Let set for 30 minutes and drain.

4Peel, seed and dice the tomatoes and combine with the cucumbers, onions, garlic, herbs and olive oil.

5Taste and add more vinegar, salt and pepper if necessary.

6Boil the spaghetti in several quarts of salted water until cooked through, but still chewy.

7Toss the hot pasta with the cucumber-tomato mixture, serve with grated Parmesan cheese.
