- 4 pounds whole carrots, peeled
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 1/2 teaspoons ground cumin
- 1 teaspoon crushed red pepper
- 1/2 teaspoon minced garlic
- 1 pinch salt
- 1 pinch pepper
Directions

1Preheat oven to 425 degrees F.

2Wash and peel carrots. Arrange side by side in a baking pan.

3Drizzle with olive oil and red wine vinegar. Rotate carrots to coat.
