Currant Oatmeal Ginger Chip Cookies

Ingredients

  • 2 cups unbleached flour
  • 1 tsp. baking soda
  • 1tsp. baking powder
  • 3/4 tsp. salt
  • 1/2 tsp. cinnamon & nutmeg
  • 1/4 tsp. cardommen & cloves
  • 2 sticks and 2 Tblsp. unsalted butter
  • 1 3/4 cup raw sugar
  • 1/4 cup sugar
  • 2 large eggs
  • 3 tsp. vanilla
  • 3/4 cup currants
  • 1/2 cup ginger chips
  • 3 cups rolled oats

Directions

    Preheat over to 350 degrees.

    In a small bowl whisk together flour, soda, baking powder, salt and spices.

    In a larger bowl beat on medium speed with a mixer the butter and sugars till lightened a bit. Then mix in eggs and vanilla. Stir the flour mixture into the butter mixutre until well blended. Stir in the remainder of the ingredients. Drop dough with a tablespoon onto a foiled cookie sheet and bake for 7-9 minutes until lightly borwned on top.
