Currant-Studded Bulgur

Ingredients

  • 1 c. water
  • 1/3 c. currants
  • 1 Tbsp. honey
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cumin
  • 1 c. bulgur (cracked wheat)
  • 4 green onions, chopped
  • 1 Tbsp. fresh lemon juice

Directions

    Combine water, currants, honey, salt, black pepper, cinnamon and cumin in a medium-size saucepan.

    Bring to simmering.

    Stir in bulgur and green onions.

    Remove from heat, cover and let stand for 10 minutes or until the bulgur is tender.

    (Can be made up to a day ahead and refrigerated.)
