  • 2 tablespoons butter
  • 12 tablespoon curry powder
  • 1 (13 1/2 ounce) can coconut milk
  • 2 tablespoons olive oil
  • 1 cup sliced onion
  • 5 garlic cloves, minced
  • 4 chicken thighs, boneless, skinless, cubed
  • 1 potato, diced small
  • 14 teaspoon salt (to taste)

Directions

    Prep ingredients (cube potatoes, slice onions, chop garlic and cube chicken).

    In a large skillet, melt butter over low heat .

    Once melted, add curry powder and swirl until well blended.

    Add in the can of coconut milk and mix thoroughly.

    Keep warm.

    In a separate skillet, saute the garlic and onions in olive oil.

    Once the onions are translucent, add chicken.

    Once the meat is cooked very lightly, add potatoes and curry mix to the pan.

    Cover and simmer about 30 minutes.

    Serve over rice.
