Ingredients
- 2 tablespoons butter
- 12 tablespoon curry powder
- 1 (13 1/2 ounce) can coconut milk
- 2 tablespoons olive oil
- 1 cup sliced onion
- 5 garlic cloves, minced
- 4 chicken thighs, boneless, skinless, cubed
- 1 potato, diced small
- 14 teaspoon salt (to taste)
Directions

1Prep ingredients (cube potatoes, slice onions, chop garlic and cube chicken).

2In a large skillet, melt butter over low heat .

3Once melted, add curry powder and swirl until well blended.

4Add in the can of coconut milk and mix thoroughly.

5Keep warm.

6In a separate skillet, saute the garlic and onions in olive oil.

7Once the onions are translucent, add chicken.

8Once the meat is cooked very lightly, add potatoes and curry mix to the pan.

9Cover and simmer about 30 minutes.

10Serve over rice.
