- 3 large chicken breasts
- 1/4 c. butter
- 2 cloves garlic
- 1 c. converted rice
- 1 can (2 c.) chicken broth
- 1 small can coconut
- 3 c. milk
- 1 c. chopped onion
- 1/2 c. butter
- 1/2 c. flour
- 1/4 tsp. ginger
- 1 1/2 tsp. curry powder
Directions

1Dry chicken breasts.

2Melt 1/4 cup butter.

3Add 2 cloves garlic.

4Saute garlic until brown.

5Throw garlic pieces out and saute chicken breasts at 300° until done.

6Debone and remove skin. Cut meat into bite-size pieces.

7Set aside.

8Cook 1 cup converted rice in 1 can chicken broth.

9Cook until rice absorbs broth.
