Curried Deer

Ingredients

  • 2 1/2 pounds deer lean
  • 1 large onions chopped
  • 3 cloves garlic crushed
  • 3 teaspoons curry powder
  • 6 ounces tomato paste
  • 2 each bay leaves
  • 1/4 teaspoon cloves powder
  • 2 cups beef stock prefer veal stock if possible
  • 4 each carrots diced
  • 1/2 cup raisins, seedless
  • 1 cup grapes, seedless
  • 1 each apples diced
  • 1 teaspoon lemon juice
  • 1 x salt and black pepper to taste

Directions

    Cut meat into 2 to 3 centimeter cubes.

    Lightly brown meat, onion and garlic in large, oiled skillet.

    Add curry powder and tomato paste.

    Mix well.

    Add beef stock and mix in rest of ingredients.

    Simmer for 1 1/2 hrs, covered.

    Almost any part of the deer may be used.

    Be sure to trim off all the fat and sincew.
