Curried Deviled Eggs

Ingredients

  • 6 hard cooked eggs
  • 3 tbsp mayonnaise
  • 1 tbsp plain yogurt
  • 1/2 to 3/4 teaspoon curry powder
  • 1 salt to taste
  • 1 tsp Dijon mustard
  • 1 cilantro leaves for garnish ( if desired)
  • 1/4 to 1/2 teaspoon sriracha hot sauce

Directions

    Peel eggs and cut in half lengthwise.

    Remove yolks and place in a medium bowl.

    Add mayonnaise, yogurt, curry powder, mustard and hot sauce to bowl with yolks.

    Mash and stir together until smooth.

    Taste and add salt as needed.

    Using a pastry bag or baggie with the end cut off, add yolk mixture to the hollow of each egg white half.

    Garnish with cilantro if desired.
