Curried Eggs With Rice

- 1 tablespoon oil
- 1 onion thinly sliced
- 15 ounces sauce tikka masala
- 1 1/3 cups frozen peas
- 8 hard boiled eggs quartered
- steamed rice to serve
- plain yogurt to serve
Directions

1Heat oil in a medium saucepan on high heat. Add onion and saute for 2-3 mins, until tender. Stir in tikka masala sauce and 1/2 cup water. Bring to a boil and add peas. Reduce heat to low and simmer for 4-5 mins.

2Add eggs and stir gently to combine. Simmer for 2-3 mins, until heated through. Serve curried eggs with steamed rice and a dollop of yogurt.
