Ingredients

  • 1 cup water
  • 1 teaspoon salt
  • 1 stick butter
  • 1 cup sifted flour
  • 4 eggs
  • 1 cup finely shredded Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • Freshly ground black pepper

Directions

  1. 1
    Preheat oven to 375 degrees.
  2. 2
Butter a nine-inch flan ring or a cake tin that has a removable bottom.
  3. 3
Combine water, salt and butter in a saucepan.
  4. 4
Simmer until the butter melts, then bring to a boil.
  5. 5
Remove from heat and add the flour all at once.
  6. 6
Beat vigorously with a wooden spoon until the paste is smooth and leaves the sides of the pan.
  7. 7
Place over low heat and cook, stirring, until the mixture begins to film the bottom of the pan.
  8. 8
Remove from heat and beat in the eggs one at a time, beating well to thoroughly incorporate each.
  9. 9
(The paste can be put into the bowl of a food processor and the eggs added one at a time and processed with the steel blade until blended.)
  10. 10
Transfer paste to a mixing bowl and add the remaining ingredients.
  11. 11
Spoon rounded tablespoons of this mixture close together in a ring inside the cake ring or flan ring.
  12. 12
Place in the middle of the oven and bake for about one hour, until the gougere is brown and firm to the touch.
  13. 13
    Cool briefly and serve.
