Curried Haddock Chowder

- 1 Tbsp. olive oil
- 1 onion, chopped
- 2 slices bacon, finely chopped
- 1 green pepper, diced
- 1 1/2 Tbsp. curry powder
- 2 c. chicken stock
- 1 1/2 c. milk
- 1/2 lb. haddock, cubed
- 12 oz. can sweet corn
- 2 medium potatoes, diced
- salt and pepper
- chopped chives (to garnish)
Directions

1Heat oil and cook onion and bacon for 2 to 3 minutes.

2Add green pepper and curry and cook a further minute.

3Pour over stock and milk, then add fish, corn and potatoes.

4Season.

5Cover and simmer for 20 minutes.
