Curried Rice

Ingredients

  • 1/2 cups Sliced Almonds
  • 2 cups Brown Rice, Cooked
  • 1/2 cups Dried Currants Or Cranberries
  • 2 cups Seedless Red Grapes, Halved
  • 1/2 cups Scallions, Finely Chopped
  • 2 Tablespoons Olive Oil
  • 4 teaspoons Honey
  • 2 Tablespoons Lemon Juice
  • 1 teaspoon Curry Powder
  • 3/4 teaspoons Salt

Directions

    Toast sliced almonds on a cookie sheet for 6 minutes at 325F.

    Cook 2 cups of brown rice as directed. Once the rice is done, add the rest of the ingredients into the pot and combine. Adjust curry powder amount, if necessary. Stir in toasted almonds.
