- 3 onions, chopped
- 1 (14.5 oz.) can whole tomatoes, drained or chopped
- 2 Tbsp. curry powder or to taste
- 2 c. rice
- 4 c. water
- 1 1/2 tsp. salt
Directions

1Brown onions in oil.

2Add tomatoes and curry powder; cook for 5 minutes.

3Bring water to boil.

4Add salt, then the curried mixture.

5Sprinkle in rice.

6Cover with a tight fitting lid; simmer for 20 minutes.
