  • 3 Tbsp. oil
  • 3 onions, chopped
  • 1 (14.5 oz.) can whole tomatoes, drained or chopped
  • 2 Tbsp. curry powder or to taste
  • 2 c. rice
  • 4 c. water
  • 1 1/2 tsp. salt

    Brown onions in oil.

    Add tomatoes and curry powder; cook for 5 minutes.

    Bring water to boil.

    Add salt, then the curried mixture.

    Sprinkle in rice.
