Curried Rice Salad

Ingredients

  • 2 1/4 cups water
  • 1 cup uncooked long grain rice
  • 1 tablespoon margarine
  • 1 teaspoon salt (optional)
  • 1 cup frozen peas, thawed and cooked
  • 1 cup thinly sliced celery
  • 4 green onions, sliced
  • 1/2 cup mayonnaise
  • 1/2 cup chutney
  • 1 teaspoon curry powder

Directions

    In saucepan put water, rice, margarine and salt; bring to a boil.

    Reduce heat; cover and simmer 20-25 minutes.

    Cool.

    Add peas, celery and onions.

    In small bowl combine mayonnaise, chutney, and curry powder.

    Add to rice and stir well.
