Curried Rice Timbale

  • 18 oz instant basmati rice
  • 2.5 oz mixed frozen vegetables
  • 2 oz Cheddar cheese, grated
  • 8.5 oz canned tuna in spring water, drained, flaked
  • None None Thai red curry paste, to taste
  • None None mixed greens, to serve

Directions

    Preheat oven to 350°F. Lightly grease 6 - 8.5oz ramekins. Place on a baking tray.

    Combine rice, vegetables, cheese, tuna and curry paste. Distribute between prepared ramekins, press mixture down lightly and bake for 20-25 mins, or until golden. Let cool in ramekins for 10 mins then turn out onto serving plates. Serve with salad.
