Curried Tomato Bisque

  • 1 tbl olive oil
  • 1 small onion
  • 2 cloves of garlic
  • 1/2 tsp black pepper
  • 1 tsp curry
  • 1- 28 oz can of whole peeled tomatoes

Directions

    Heat olive oil in medium saucepan over medium heat

    Add 1 chopped small onion, crushed garlic, black pepper and cook stirring till soft 3-5 min

    Add curry powder and cook stirring till fragrant about 30 seconds

    Add tomatoes with their juices and 1/2 c water bring to a boil
  5. 5
    In a blender puree till smooth divide between 2 containers and refrigerate for up to 1 day
