Curried Tomato Soup

Ingredients
- 4 Tbsp. butter
- 3/4 c. chopped onion
- 2 Tbsp. curry powder
- 3 (14 oz.) cans Italian tomatoes
- 3 c. chicken broth
- 1 bay leaf
- 1/2 c. sour cream
Directions

1Heat the butter in a saucepan; add the onion and cook slowly, stirring until they are tender, but not browned.

2Stir in the curry powder.

3Cook 5 minutes.

4Add the tomatoes, chicken broth and bay leaf.

5Bring to a boil and simmer, uncovered, for 20 minutes.

6Remove the bay leaf.

7Puree the soup in a blender or food processor.

8Turn into a soup tureen and stir in the sour cream.

9Serves 10.
