- 1/2 medium onion, sliced thin
- 1 tsp. margarine
- 1 tsp. garlic powder
- 1 tsp. curry powder
- 1 tsp. cilantro
- 1 (16 oz.) can peeled, whole tomatoes
Directions

1Saute onion with margarine in saucepan; add garlic, curry powder and cilantro.

2If needed, add small amount of vegetable oil to prevent scorching.

3Add tomatoes with all of the liquid and increase the heat to high.

4Bring just to a boil and reduce heat to simmer.

5Cover and simmer for 20 to 30 minutes.

6Serve over rice or pasta.
