Ingredients

  • 1 large red onion, cut in strips
  • 2 to 3 cloves minced garlic
  • 1 Tbsp. oil
  • 3/4 c. water
  • 1/2 c. apple juice
  • 2 medium potatoes, cut in 1/2 inch chunks
  • 1 medium carrot
  • 2 Tbsp. soy sauce
  • 1 Tbsp. curry powder
  • 1 tsp. grated fresh ginger root
  • 1/4 tsp. cinnamon
  • 2 c. cauliflower, cut in pieces
  • 1 medium zucchini, cut in 1/2 inch chunks
  • 1 c. frozen peas
  • 1 medium red or green pepper or both
  • broccoli (optional)

Directions

    Use a large soup pot and saute onion, garlic and oil until tender.

    Add the next 8 ingredients to the onion and garlic mixture.

    Bring to a boil, cover and simmer 10 minutes.

    Add remaining ingredients.

    Cook until zucchini is tender.

    You can also add broccoli.

    Serve with rice or serve plain.

    This makes a large quantity, so plan on leftovers unless you are having a party or feeding a family of eight.
