- 1/2 c. onion, chopped
- 1/2 c. chopped celery
- 4 Tbsp. butter
- 1/2 c. flour
- 1 qt. tomato juice
- 1 1/2 tsp. curry powder
- salt and pepper to taste
- 2 to 4 c. diced turkey or chicken
- 2 to 4 c. cooked rice
Directions

1Simmer onion and celery in butter until tender.

2Add flour, curry powder and salt.

3Blend well and add tomato juice, cook over medium heat.

4Stir constantly until mix comes to a boil.

5Add turkey and let come to a boil again.

6Reduce heat to a simmer for about 30 minutes.

7Serve over rice.
