- 2 lb Catfish Nuggets
- 1 tbsp curry powder
- 2 tsp chili powder
- 2 tbsp cilantro
- 1 lemon
- 1/2 cup olive oil, extra virgin
- 1 onion
- 2 tsp black pepper
- 1 tbsp coriander
- 1 tbsp minced garlic
- 1 tsp salt
Directions

1Marinate catfish for 2 hours with seasoning mixture and olive oil.

2Julienne onion and saute with garlics until slightly translucent.

3Add marinated catfish along with one cup of water.

4Cook on medium for 5 minutes uncovered then cover and cook for additional 5 minutes.

5Add lemon juice and 1 tablespoon of cilantro.

6Cook uncovered for final 5 minutes to reduce stock.

7Garnish with remaining cilantro, plate and serve.
