Ingredients
- 2 lb. skinless chicken
- 1 medium onion
- 4 large cloves garlic
- 3 Tbsp. curry powder
- 1 tsp. pepper
- 2 Tbsp. vegetable oil
- 1/2 c. coconut milk
- 2 medium potatoes, cut up
- 1 1/2 c. water
- salt to taste
- 1/2 lemon or lime
Directions

1Cut chicken into medium pieces.

2Squeeze a half lemon or lime on chicken; mix together and set aside.

3In Dutch oven or large pot, put oil and garlic (cut fine).

4Let garlic brown; cut onion and add to garlic.

5Fry for 1 minute.

6Rinse chicken twice and add it to the onion and garlic; stir.

7Add curry powder, water, coconut milk, pepper, potatoes and salt to taste.

8Cook on medium heat, stirring occasionally.

9When potatoes are cooked, it's finished.

10Serve on rice.
