- 1 1/4 cup light coconut milk
- 2 tbsp soy sauce
- 2 tsp sugar, or to taste
- 1/2 tsp salt, or to taste
- 2 tbsp olive oil
- 1 tsp crushed red pepper flakes
- 1 zest of 1 lemon
- 2 tbsp curry powder
- 1 1/2 tbsp minced garlic
Directions

1In a small bowl, combine the coconut milk, soy sauce, sugar, and 1/2 teaspoon kosher salt.

2Place a wok or skillet over medium-high heat.

3Add olive oil and heat for 30 seconds.

4Add red pepper flakes, zest, garlic, and curry powder and stir-fry until fragrant, about 15 seconds.

5Add the coconut-milk mixture and bring to a boil.

6Cook until the sauce thickens slightly, 1 1/2 minutes.

7Add basil.

8Pour into a bowl.
