- 1 cup lentils
- 2 tomatoes
- 1 teaspoon turmeric
- 2 cups water
- 1 tablespoon oil
- 1 teaspoon black mustard seeds
- 12 teaspoon cumin seed
- 2 chilies, green seeded and chopped
- 1 onion, chopped
- 2 garlic, cloves, minced
- 1 teaspoon chili powder
- 1 teaspoon curry powder
- 16 ounces spinach, washed, chopped
Directions

1Combine lentils, tomato, turmeric, and water.

2Boil until done.

3Add oil to a fry pan.

4Add black mustard seeds and cumin seeds.

5Add chilies and onion.

6Add garlic, chili powder, and curry powder.

7Cook until seeds pop and veggies are limp.

8Add spinach.

9Add lentils; mix; serve.
