- 1 1/2 lb. boneless lamb shoulder
- 5 Tbsp. salad oil
- 1 large onion, sliced
- 1 clove garlic
- 2 tsp. curry powder
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. chopped celery
- 1 tart apple, peeled and chopped
- boiling water
Directions

1Cut lamb into 1-inch pieces.

2Heat oil in large skillet.

3Add onion and garlic.

4Cook until onion is lightly brown.

5Remove and discard garlic.

6Add curry powder, salt and pepper.

7Cook 5 minutes.

8Add lamb, celery, apple and enough boiling water to cover.

9Mix well.
-
10Cover and simmer 30 minutes or until lamb is tender.

11Serve with rice.
