Curry Roasted Cauliflower

- 1/4 cup olive oil
- 2 teaspoons curry powder
- 2 teaspoons sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups cauliflower florets, washed
- 2 tablespoons slivered almonds
Directions

1Preheat oven to 400 degrees.

2Mix the olive oil, curry powder, sugar, lemon juice, salt and pepper in a small mixing bowl.

3Place the washed and well drained cauliflower florets in a 13 x 9 inch baking dish; pour the oil mixture over the florets and toss gently.

4Cover with foil and bake 15 minutes; remove from oven and stir in almonds mixing lightly.

5Return to oven and bake uncovered for an additional 10 to 15 minutes or until cauliflower is browned and almonds are toasted.
