Ingredients
- 2 Tbsp. oil
- 1 large onion, thinly sliced
- 1 clove garlic, minced
- 2 medium green peppers (thin strips)
- 1 medium red pepper (thin strips)
- 2 1/2 c. sliced mushrooms
- 1 can whole tomatoes, coarsely chopped
- 1 1/2 tsp. dried basil
- 1/4 tsp. pepper
- 8 oz. thin spaghetti
- 2 Tbsp. grated Parmesan cheese
Directions

1Heat oil in large skillet over medium-high heat.

2Add onion and garlic.

3Saute 1 minute.

4Add green and red peppers and mushrooms. Saute 2 minutes.

5Add tomatoes and juice, basil and pepper.

6Bring to a boil.

7Reduce heat to low and simmer 5 minutes.

8Toss with cooked spaghetti and cheese.

9Yields 4 servings.
