- 8 skin-on salmon fillets
- 2 tsp. oil
- 1 1/4 tsp. salt
- 2 tbsp. orange peel
- 4 tsp. curry powder
- 1 tsp. Black pepper
Directions

1Prepare grill for direct grilling on medium Brush grate until very clean.

2Combine orange peel, curry powder, and black pepper and set aside.

3Pat salmon fillets dry.

4Brush fillets all over with oil; sprinkle with salt.

5Coat flesh sides with curry-rub.

6Push soaked skewers through salmon lengthwise; place, skin side down, on grill.

7Cover; cook without turning over 14 minutes or until just opaque.

8With metal spatula, scrape fillets from grill.

9If skin sticks to grate, remove fillet only.
