- 2 1/2 c. cooked, mashed cushaw
- 1 1/2 c. sugar
- 1/2 tsp. salt
- 4 eggs, slightly beaten
- 1 can evaporated milk (1 1/2 c.)
- 2 Tbsp. light corn syrup
- 1 tsp. each: nutmeg, cinnamon, apple pie or pumpkin pie spice, vanilla and lemon extract
Directions

1Combine cushaw, sugar and salt.

2Add remaining ingredients. Bake at 425° for 30 minutes.

3Reduce heat to 350° for 15 minutes or until knife inserted comes out clean.

4Do not overbake.

5Makes 2 (9-inch) deep dish pies.
