  • 2 Tbsp. mandarin peel, chopped
  • 1 (15 oz.) can mandarins, drained
  • 3 egg yolks, beaten
  • 1/4 tsp. salt
  • 1/3 c. sugar
  • 3 c. milk
  • 2 Tbsp. cornstarch
  • 2 Tbsp. candied mandarin peel

Directions

    Place mandarin sections in a single layer in the bottom of 6 individual ramekin dishes.

    Scald milk and pour over beaten egg yolks, stirring constantly until blended.

    Combine sugar, cornstarch and salt, mix with egg mixture.

    Cook mixture in a double boiler until thick, about 7 minutes.

    Fill ramekins with custard.

    Bake in slow oven at 325° for 10 to 15 minutes.

    Serve cold.
