- 2 Tbsp. mandarin peel, chopped
- 1 (15 oz.) can mandarins, drained
- 3 egg yolks, beaten
- 1/4 tsp. salt
- 1/3 c. sugar
- 3 c. milk
- 2 Tbsp. cornstarch
- 2 Tbsp. candied mandarin peel
Directions

1Place mandarin sections in a single layer in the bottom of 6 individual ramekin dishes.

2Scald milk and pour over beaten egg yolks, stirring constantly until blended.

3Combine sugar, cornstarch and salt, mix with egg mixture.

4Cook mixture in a double boiler until thick, about 7 minutes.

5Fill ramekins with custard.

6Bake in slow oven at 325° for 10 to 15 minutes.

7Serve cold.
