- 2 1/2 c. scalded milk
- 2/3 c. sugar
- 1/2 tsp. salt
- 4 eggs, slightly beaten
- 1 tsp. vanilla or almond extract
- nutmeg
Directions

1Combine scalded milk, sugar and salt.

2Stir until sugar is dissolved.

3Very gradually add milk mixture to eggs stirring until well blended.

4Add extract.

5Pour mixture into unbaked pie shell. Sprinkle with nutmeg.

6Bake on center shelf of preheated oven at 450° for 5 minutes.

7Reduce heat to 425° and bake 10 to 20 minutes or until center is firm.

8For a change, coconut may be sprinkled over crust before filling is added.
