- 1/2 recipe pie pastry
- 2 c. milk
- 3 eggs or 6 yolks
- 1/2 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 1/2 tsp. vanilla
Directions

1Roll out pastry; line pan.

2Scald milk over hot water, in top of double boiler, or on very low heat.

3Beat eggs slightly.

4Add sugar, salt, nutmeg and vanilla.

5Add scalded milk slowly to egg mixture, stirring.

6Pour custard into pastry-lined pan.

7Bake at 425° for ten minutes.

8Reduce heat to 325° and bake 25 minutes.
