  • 1 1/4 c. sugar
  • 2 Tbsp. butter (at room temperature)
  • 1/2 tsp. salt
  • 4 large eggs, beaten
  • 2 c. milk
  • 1 tsp. vanilla extract
  • 1 (10-inch) pie shell

Directions

    Preheat oven to 425°.

    In a mixing bowl, combine the sugar, butter and salt.

    Beat with an electric mixer until smooth. Add the eggs and mix until well blended.

    Add milk and vanilla; beat until smooth.

    Pour the mixture into the pie shell and bake 15 minutes. Reduce heat to 350° and bake until the pie begins to set around the edges and the middle is still jiggly.

    Let cool, then chill slightly.
