- 3/4 c. cooked rice
- 1/2 c. raisins
- 1 (12 oz.) can evaporated milk
- 1/4 c. water
- 3 eggs
- 1/3 c. sugar
- 1/2 tsp. nutmeg
- 1 tsp. grated lemon rind
- 1 tsp. lemon juice
Directions

1Combine rice and raisins in a 1-quart casserole.

2Beat together the milk, water and eggs.

3Then add remaining ingredients until mixture is very smooth.

4Pour over rice and raisin mixture. Place casserole in a pan of hot water and bake at 350° for 1 hour or until custard is firm and a knife inserted comes out clean.
