  • 3/4 c. cooked rice
  • 1/2 c. raisins
  • 1 (12 oz.) can evaporated milk
  • 1/4 c. water
  • 3 eggs
  • 1/3 c. sugar
  • 1/2 tsp. nutmeg
  • 1 tsp. grated lemon rind
  • 1 tsp. lemon juice

Directions

    Combine rice and raisins in a 1-quart casserole.

    Beat together the milk, water and eggs.

    Then add remaining ingredients until mixture is very smooth.

    Pour over rice and raisin mixture. Place casserole in a pan of hot water and bake at 350° for 1 hour or until custard is firm and a knife inserted comes out clean.
