  • 6 or more fish fillets
  • 1 c. chopped green onions
  • 1 c. sliced fresh mushrooms
  • 1/2 c. chopped celery
  • 1 1/2 c. white wine
  • white pepper
  • garlic salt
  • 1 sliced lemon (with rind)
  • 2 to 3 Tbsp. olive oil

    Claude Smith go fishing and bring you some fish all cleaned and filleted and in Baggies.

    Cut up onions, mushrooms, celery and lemon and saute with olive oil.

    Add seasonings to the mixture and then the wine.

    Gently add fish and cook at medium-low temperature, about 15 minutes or until done.

    (Works well with trout, catfish and even cheap fish, better if fish is fresh.)
