Ingredients
- 5 lb. chitterlings
- 2 large purple onions
- 3 lemons
- 1 c. flour
- 1 c. cornmeal
- 1 Tbsp. salt
- 1 Tbsp. black pepper
- enough oil to fill cooking pot half full
Directions

1Wash and pick chitterlings real good.

2Pick most of the fat from them.

3Cut into 5 to 6-inch lengths.

4You better have 1/2 of a day to cook chitterlings.

5Put chitterlings in pot with boiling water (to cover).

6Slice lemons and onions and add to pot.

7Boil until tender.

8Remove from pot and drain.

9Mix meal, flour, salt and pepper in double layered paper bag and put several pieces in bag and shake to coat.

10Drop into hot oil and deep fry until golden brown and crispy.

11Lift out and drain on paper towel. Serve hot.
