- 4 slices bacon
- 4 c. pared, sliced raw potatoes
- 1 onion, sliced
- 2 c. cooked tomatoes
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. prepared mustard
- 1 tsp. sugar
- 1/4 tsp. celery salt
Directions

1Panfry bacon until done.

2Remove bacon and place on absorbent paper to drain.

3Add the potatoes and onion to the bacon fat and saute for 10 minutes.

4Turn gently with a spatula to distribute the fat.

5Add remaining ingredients and simmer until potatoes are tender and tomato is slightly thickened, about 20 minutes.

6Break the crisp bacon in small pieces and sprinkle over top when ready to serve.

7Makes 4 to 6 servings.
