Ingredients
- 2 tablespoons butter
- 1 cup onion
- 2 bunches dandelion greens (washed and chopped, without tough stems)
- 14 teaspoon nutmeg
- 12 teaspoon salt
- 12 teaspoon pepper
- 4 cups water
- 34 cup light cream
- 14 cup honey
Directions

1melt butter in large stock pan

2add onion and flour.

3cook for 2-3 minutes.

4add greens, stir until wilted.

5Add water, nutmeg, salt and pepper.

6Bring to a boil.

7Reduce temperature, cover, and simmer for 10 minutes.

8Carefully transfer contents of pan to blender.

9Blend until pureed.

10add light cream and honey, blend.

11Pour through fine mesh sieve to remove fibers.

12Enjoy hot or cold!
