  • 2 eggs
  • 14 teaspoon salt
  • 1 cup flour
  • 12 teaspoon baking powder
  • 12 teaspoon baking soda
  • 1 tablespoon sugar
  • 1 cup buttermilk
  • 4 tablespoons butter
  • confectioners' sugar (to garnish)
  • apple, slices (or other fruit)

Directions

    Beat egg yolks until light and fluffy, then add sugar and salt.

    Sift flour with baking powder and baking soda.

    Add dry to wet alternating with buttermilk as you continue mixing.

    Beat the egg whites until stiff.

    Fold them gently into the batter.

    Drop batter into cups, filing each 2/3 full.

    If you wish, add apple slice or other fruit in the center of each.

    Cook over medium heat until browned and crisp on bottom.
