Danish Open-Faced Sandwiches

- 2 onions
- 4 slices brown bread
- 2 Tbsp. butter
- 4 Tbsp. chopped dill
- 8 sardines (canned)
- 2 tomatoes
- 1 c. chopped, peeled cucumber
- 1/2 c. mayonnaise or sour cream
- 1/2 tsp. sugar
Directions

1Peel onions and cut into thin slices.

2Pour over boiling water and leave to cool.

3Spread the bread thinly with butter and sprinkle over half of the dill.

4Drain the sardines and arrange 2 on each piece of bread.

5Cut the tomatoes into thick slices. Place the drained onion and tomato slices on the sardines and top with cucumber mixed with mayonnaise or sour cream, sugar and remaining dill.

6Serves 4.
