- 1 lb. very sm. new potatoes, washed
- 3/4 cup dark brown sugar, packed
- 1/2 stick butter
- Salt and pepper, to taste
- Fresh chopped parsley (for garnish)
Directions

1In a medium pot boil the potatoes until almost fork tender about 7-8 minutes.

2Pour off the water and let cool enough to handle.

3Then peel the potatoes and set aside.

4In a medium to large pan, melt the butter over medium low heat.

5Add the dark brown sugar; stir and let heat through.

6Raise the heat a little (you are trying to almost make caramel).

7When slightly thick add the cooked new potatoes.

8Stir and cover the potatoes with the caramel sauce.

9Salt and pepper to taste and garnish with the chopped parsley.
