- 1 large red cabbage, cored and thinly sliced
- 2 Tbsp. fat (raw goose fat, salt pork or bacon fat)
- 1/2 c. wine vinegar (second choice, cider vinegar)
- 2 to 3 apples, peeled and cut up fine
- 5 to 6 allspice berries
- 1 scant tsp. salt
- 2 to 3 Tbsp. sugar
- handful of raisins (optional)
Directions

1Put cabbage in a heavy, porcelain lined iron pot with vinegar. Add fat.

2Carefully bring to a boil.

3Add a little water if necessary.

4Add apples, allspice berries, salt, sugar and raisins. Cabbage should be juicy but not soupy.

5Taste for salt and give the pepper mill a few turns.
