  • 1/2 lb. chopped dates
  • 2 tsp. baking powder
  • 1 1/2 c. boiling water
  • 1 c. sugar
  • 2 1/2 c. flour
  • 1/2 c. walnuts, chopped
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 2 eggs

Directions

    Pour boiling water over chopped dates and baking powder and set aside to cool.

    Beat egg yolks and sugar and add to cool dates.

    Add flour, nuts, vanilla and salt; mix well.

    Fold in stiffly beaten egg whites.

    Bake in loaf pan (8 x 4 x 2-inch) in 350° oven for 1 hour or more.
