Ingredients

  • 1/2 c. flour
  • 1/4 tsp. salt
  • 1 c. chopped dates
  • 1/4 c. flaked coconut
  • 2 eggs
  • 1/4 c. butter, melted
  • 1/2 tsp. baking powder
  • 1 c. sugar
  • 3/4 c. chopped nuts
  • 1 tsp. vanilla

Directions

    In a medium mixing bowl, thoroughly stir together the flour and baking powder.

    Add salt and sugar and stir well.

    Add dates; mix with fingers to separate dates.

    Stir in nuts and coconut.

    In a small mixing bowl, beat eggs enough to blend yolks and whites. Add to flour mixture with butter and vanilla; stir to mix thoroughly.

    Turn into a buttered square cake pan (9 x 9-inch) and bake in a 325° oven for 45 minutes.
