Date Bran Bread

  • 1 pkg. Pillsbury date quick bread mix
  • 1 c. whole bran wheat cereal (shredded type)
  • 1 c. buttermilk
  • 2 Tbsp. honey
  • 1 egg
  • 1 Tbsp. wheat germ

Directions

    Heat oven to 375°.

    Grease and flour bottom of an 8 x 4 or 9 x 5-inch loaf pan.

    In a large bowl, combine quick bread mix, bran cereal, buttermilk, honey and egg. Stir by hand 50 to 75 strokes until dry particles are moistened.

    Pour into prepared pan. Sprinkle wheat germ over batter.

    Bake for 45 to 55 minutes or until toothpick comes out clean.

    Cool upright in pan 15 minutes, remove and cool on wire rack. Store tightly covered overnight in refrigerator.

    If desired, serve with cream cheese and apricot preserves.
